How do I "Cellar" Beer?

    This may be extremely basic and uninformed but.. How do I Cellar beer? Do I just stick it in a dark place and bring it out for refrigeration when it's ready to be consumed? I have a brother who loves beer, but unfortunately lives in China. I'd like to grab plenty of good stuff for him over the next year, and want to make sure it's good to go by the time he's here. I also just want to try it for myself, because I love beer more and more everyday. Thanks everyone.

    You want to make sure you are aging beer that is appropriate to age (in general, think high ABV, styles that are not dependent on hop flavors, and many sour styles), and you want to keep it in a dark and cool place (around 55°F). It is also worth getting to know these beers fresh, so as to have a baseline for comparison. There are lots of discussions about beers that are good for cellaring on these forums, so you can find some good info by searching the forums on that. And once you are ready to drink, just throw it in the fridge. Nothing too complicated.
