From my schooldays I would say that the final t should not be pronounced, that the stress is slightly on the first syllable and I would suggest roshfor or roashfor (I'm sure both these would be commonly used)

Bartenders in Belgium always pronounced it "Rosh-for" with a long O. So, that's what I've gone with.

I've Googled it before, and came to this conclusion. I usually pronounce it as "Roke-eee," as a nickname, essentially, but "Roke-eh-fore" seems to be correct.

I don't claim to be an expert, though; that's just what my class at the University of Google taught me.

The middle e should certainly not be sounded, and in my hazy schooldays we would be taught to give the initial R a little flourish, like clearing the throat a little. say hrosh fort

Like said before by others, it's like Rosh-For. Been to the abbey twice, and that's how the monk selling cheese calls it. Pretty basic French phonetics!

My wife and I had it for the first time years ago in Seattle, and the server seemed like he knew his shit, so we have always pronounced it the way he did, which is something like "Roe-sh-fer"

You probably should have titled the thread, "How does Rochefort pronounce Rochefort?". I think when you said "you", people thought you just wanted them to tell you how they pronounce it and not how it's actually pronounced.:flushed:
