I'm quickly running out of space and unlike some of you mid-westerners with those things called basements we don't have a room we can devote to cellaring/aging due to temperature changes.

I would like to avoid storing off-site but I'm at capacity unless I buy a fourth fridge...

    Pics would be welcomed.

    closet. at room temperature.

" cellaring " beer in california is pretty much a misnomer.

I'm currently researching the option of Space Cellaring. Cellaring in low Earth orbit provides for no threats of oxidation, vibrations limited to almost zero, and free cooling. There are some down sides though,.

In all seriousness, most of my collection is off site. You only have three options, if you don't want to buy another fridge:
    1. Storing at Room Temp
    2. Digging a hole and cellaring underground
    3. Find someone who will let you store beer in their cellar/Fridge.

There is a fourth option: Many large cities have companies that offer off-cite cellaring services, either in the form of general temperature-controlled long-term storage or even as specific cellar storage and management services. Most are wine-oriented, but would probably work pretty well for most beers. I doubt you'd be the only person cellaring beers at any of these places. A few from up and down the coast:

Buy a chest freezer and strap a temp. controller on it?
I have 140+ 12oz bottles and around 50 750mls in a 14.9 cuft chest freezer and it only cost me 150$. It only costs about 30$ a year to power it as well.

I purchased a large two door commercial refrigerator and a Johnson temp controller set at 55 degrees. I can probably store close to 400 bottles if I packed it full, maybe more. I have a second smaller frig I keep cooler for my IPA's.

I have a small wine fridge, but right now most of it is just on my floor. Since it's still pretty cold out I'm not really worried about temperature, I doubt my place gets above 70 at any point right now. Come summer I'll probably move whatever is still left (trying to drink it down somewhat) to my girlfriend's garage, which is actually pretty close to a basement in construction, it stays cool and dark even in 90+ weather.
