How does Atrial Rubicite age ??

    I know the raspberry flavor probably fades over time but has anyone notice an increase in sour, complexity, or any other aspect? I have had a few fresh from the last batch and it's amazing fresh!! I wonder if its worth aging or best fresh!!

    jester king has always recommended drinking any of their fruited sours within a year.

    I had a batch 1 in December and it was actually better than I had remembered it being fresh. Slightly more tart with a good fruit presence.

    It becomes a lesser beer without the bright raspberry fruit. Had my last batch 1 a few weeks ago. Wish I would have drank it fresher. The fruit is outstanding in their fruit sours...don't waste it.

    I had a batch 1 with a year on it and it was still amazing. I'm betting it will still be good a year from now.

    Had a Batch 3 over the weekend and it was still phenomenal. Noticed a drop off of raspberry but not much. Also, more sour!

    This is a late reply but we had a batch 1 that we aged for I think about a year and we also wished that we had drank it fresh. Color and juicy fruit flavors faded. We've learned that we prefer to drink most sours and fruited beers fresher but it's personal preference and it definitely hadn't gone bad or anything but we thought it was way more phenomenal fresh.
