How does WLP099 behave?

    I'm using WLP099 for the first time. I'm at the tail end of making the starter for tomorrow's brew, and not sure how things are going.

    The behavior I'm seeing is much different than what I'm used to from Wyeast 1272, for example. I'm not sure if what I'm seeing is due to sub-optimal yeast to start with (best-by date was Jan-2016) or just the nature of the beast.

    I was hoping that I'd go through build and the yeast would simply settle (like the Wy1272), I'd decant and add the yeast to my new batch. But this yeast is showing minimal signs of settling.

    I may be headed toward adding the whole starter to the batch, but that's 5 quarts of starter. I could try to cold crash the starter, but I'd hate to lose the growth time.

    Any comments/suggestions?
