How has your palate changed?

    My palate has definitely changed to the point that my wallet is dying from exhaustion. I'm find myself buying bigger Imperial Stouts and DIPAs before any others. The only saving point is recently I'm starting to grab less big beers as the days get longer and hotter.

    I never truly disliked any style. I will say that it took me a little while to truly appreciate high ABV stouts, but now they might be my favorite style.

    I've found I have a really hard time gauging just how bitter something really is. All the drinking of 80+ IBU beers has me to where what's bitter to others is barely noticeable to me. My tolerance for spicy foods are the same way. I can eat something extremely spicy and not realize how hot it tastes to other people. That's why my wife never lets me spice food to taste, I have to let her do that part or I go overboard.
