How long without yeast will wort last?

    I decided to start over. Replacement yeast arrived hot without an ice pack.

    As a resident of a state where it's hot a lot, I feel your pain. But a suggestion: always (as in always) make a starter. Primary purpose of a stater is to confirm yeast is healthy . . . extra quantity is a bonus. Spend a day and 8 oz of dme to confirm what's going on. The last yeast I ordered (in dead of winter) arrived warm . . . but started just fine.

    Also, consider an oversized starter and pouring off the excess to be stored in your fridge. You know it's good, the date, storage conditions . . . can easily be re-started up to 4 months out. Lots of free yeast calculators to help along the way. Kiss-off the Heat Demons . . .

    As a neophyte my fault for not being prepared. This was for a low gravity brew and did not anticipate needing a starter. Do not have the ingredients on hand. For my higher gravity brews I have made starters with great success. Lesson learned.
