How long would you cellar these beers?

    I've been building my "cellar" (beers in boxes in the unfinished portion of the basement, very high tech!) for 5+ years now, and wanted to get some opinions on how long (or short) of a period like minded folks might think would be appropriate for some of my more aged brews... Thanks in advance for the input, and no need to tell me I should have consumed them when I purchased them!

    - DFH 120 minute
    - Bourbon County Stout
    - Founders Bolt Cutter
    - Firestone Walker Parabola & Sucuba

    You should probably get to drinking all of those, if they are 5+ years. I think the 120 may hold up a bit longer, but still... what are you waiting for?

    I don't suspect that the beers in question have all been in the cellar that long. That's just how long the OP has been cellaring beer.

    Edit: That said - wasn't Bolt Cutter only brewed once? I got a surprise bottle of that as an extra once, when was it brewed?

    I had an 08 bottle of 120 during Christmas and it was out-fucking-standing.

    What was it like? I have only had it once, and I drank it almost as soon as I got it. Also was out-fucking-standing but I can't help but wonder how time treats that beer.

    Wouldn't prefer aging 120 (many disagree), BCBS 2 years was very good, 1-2 will any barrel aged products from Firestone walker is usually pretty good

    Straight barleywine territory. Raisins, brown sugary, some plum-like notes. I had it right before cracking a Sucaba and it was almost on par. And Sucaba is my only 5/5 beer.

    I picked up 2 bottles in '12. Enjoyed one immensely this past November.
