How much Apricot puree?

    I am brewing an american wheat today - 1.043 OG_- 4.2% abv. 14 ibu's.

    I do not want an overly sweet or fruity beer- just enough to have a little in the background. How much puree should I rack on to? a whole can? 1/2? etc......

    I did an apricot Berliner that was pretty close to the og of your beer and used a whole can. It didn't lend much sweetness and if you taste the purée you'll find it has a bit of tartness to it. For the Berliner it worked perfectly, but it also has to battle with the sourness of the base beer.

    Large can or small? I put the small (3lb?) Can of vitners blueberry puree into secondary with a big saison and it is very noticable. 5 gallon batch. You could always add some, taste in a week and add more if needed.

    I've never used the apricot, but the 3lb can of cherry did nothing to a kriek-like-experiment-thing and. 5lb can of cherry was subtle inan imperial porter.

    Use it all and hope that gets the job done. You may even want to consider a 1/2 batch. You can blend when you go into a bottling bucket or keg.

    You don't need to worry about fruit adding any sweetness. The sugars will ferment out completely.
