I have around 200 bottles in mine. Some are for aging, others are one I try to keep until the new release. God forbid I want a beer that is out of season and I don't have it. The experiment aspect of it fascinates me, I want to see what a beer becomes. I have had more victories than defeats.

My "cellar" is a closet, and it currently has about 10 Dark Lords of assorted vintage (plus my various homebrew creations that are in varying stages of aging).

Most of my store-bought beer is consumed within a month or so, despite my best intentions to save this one or that one....

Cellarable beers can be purchased as desired. Drinkers (ones with short or limited shelf lives) should be purchased with a rotation in mind.

Take one down, sit it on down, 100 bottles of beer in the cellar.

Oh God, if I were to die right now I would be so screwed, who the hell would drink all of my brews in my cellar? My cat? Well at least the booze for the wake would be taken care of!
This is why, the last time I updated my will, I included the 8+ cases located in my parents basement. They will be drank by my close friends and my dad, however they choose to. Except for one or two special bottles, that I wish to be buried with. Cmon, if the Egyptians did it, so can I! Maybe one day a great great great x10 grandson of dogfish head will unearth those beers and make them again for all to enjoy...

I had about 200 bottles at one point and just started inviting friends over all the time for tastings. Everything had dwindled down to about 20-25 until I took in a slew of trades and im back up to about 85-90. As said earlier, there are a couple things down there that took so long to get that I cant get myself to drink them unless its a special occassion. Except cherry rye. Ive traded for 8 bottles of that now and cant seem to hold on to any but the one that is in my parents basement... that beer is too good for words.

Ah, see there's the problem. It's that pesky incoming new stuff that keeps building things up. Living in SE Pennsy, I'm either forced to buy cases, sift through limited selection in the few over-priced "bottle shops" (or what passes for bottle shops here -- mainly bars that are allowed to sell up to 172 oz per take out sale and tend to stock little more than BMC) or take road trips to neighboring states. I normally choose the latter, but when I make that kind of commitment, I rarely return with less than 4-5 new six packs. And thus the cycle continues.

Uh, I think that'd make it 98 bottles. Unless of course it's a magic cellar where subtraction results in addition, in which case...no, I don't want to get into that fantasy.

Started my cellar last summer. It's a very modest cellar containing a few bottles of Syx, Darkness, and Pentagram from Surly and Serendipity from New Glarus. Hoping to add some beers via trade and a beer trip to Indiana this summer.

i have 43 bottles, but I need to drink at least 6 of them in the next week or so.

My buddy in Seattle just found Conflux Number 1 http://beeradvocate.com/beer/profile/63/80911 so he is laying a few down until I get out there

As long as you have enough to have 3 bottles a day for the rest of your life. Anything more would just be overkill.

The max I ever had was a little over 200 around last September. I decided this past February that I was gonna drink them up and cellar no more. It was nice to have a cellar, but as many have noted, very few beers age well, that aren't already great to drink fresh. Plus, having gained over 20lbs and having traded my 6-pack abs for 6-packs of various brews, I feel the need to get my diet and exercise regimen back on track. Right now the count stands at 104, 52 bottles each of bombers and 12ozers. I'm drinking them 1-a-day (at least), so they should all be gone in about 4-5 months, and after that, I will only buy what I need to drink on a weekly basis. Cheers!

I rarely age beers. Right now I only have a GI Sofie, 2 Sierra Nevada Bigfoots and a Firestone Walker Sucaba (which I bought today). The rest are in the fridge for when I'm ready to drink. So to answer your question, when you run out of room then you have cellared too much beer.
