How much cellared beer is too much?

    I find those that talk about their cellar are like those that talk about sex. They have little and get little.

    It's beer and with few exceptions fresh is better.

    This. Exactly. Very few beers benefit from more than a year of age on them. Judging from this site, very, very few beer drinkers know the difference. And even with lambics and barleywines, some will benefit from age and some will not. The fun of cellaring is figuring out which will. I will add to this only that some Belgian quads and strong darks can benefit from age as well. And sometimes, that '08 gueuze cellars well and the '07 doesn't. I almost always read opinions on here to the effect that aging is some magical process that improves all beer. When in reality, it only improves a few select beers. And even then, might improve one year's version of a beer and not improve another. It is very much an inexact, unpredictable endeavor. So if you find yourself sitting on cases worth of many types of beer because someone, somewhere told you that aging beer is a good thing, you are probably wasting beer. This very much is NOT wine and should not be treated as such.

    I feel this way all the time! It's so hard to crack open that beer that you worked so hard to get, or know you won't get again (or at least not for a long time)! I do think I have to just suck it up and start drinking some of them rather than letting them just sit there! At least everything I have down there is stuff that ages well...

    Explain to me how you've managed to trade for 8 bottles of Cherry Rye?! Every time I try to trade for it I just get crickets... And it's not like I have offered junk... Heady, HF beers, Old Stock Cellar Reserve, Oude Gueuze Tilquin... What in God's name are you giving up to get so much Cherry Rye?!?!
