I brewed a big ol stout awhile back and racked it onto some bourbon soaked vanilla beans and I'm wondering...is there a speedy way to mellow out or take away from some of the intensity of the vanilla. Add more bourbon? Coffe beans? Cocao nibs? Anything? Just looking for some quick and easy advice/opinions here and don't mind experimenting with the brew at all.

    Thanks,

    Kyle

If you had the keg space you could brew another minus the vanilla and blend to taste.

I will definitely keep that in mind for the future but I currently bottle all my beer, unfortunately (the kegging is coming once I have the spare cash). I think I'm just going to do some coffee beans in a tertiary carboy to meld into the beer just because I can!!! haha This was more of an experimental stout in the first place so I'm not shooting for a beer that will blow my mind, just something with the flavors that I enjoy i.e. coffee and vanilla. We'll see how this monster turns out.

I have read that vanilla fades over time, so you could bottle and wait to drink? Coffee idea sounds good, like a vanilla iced coffee drink.
In the future try and use a way of checking your flavoring agents, I put the vanilla beans in a muslin bag and dangled it into my fermenter, allowing me to taste every couple days and if it is getting strong just pull the bag out. Tasting the progress is the best part.

I know you are looking for a quick fix, but I've found that quick fixes are rarely a good substitute for time and patience. Time is your friend here. That said, adding coffee may help mask it a bit.
