How to use fresh guava?

    Any advice on using fresh guava?
    need to peel it? pulp it?

    Cigar City does a Guava Siason and it's noted they use a puree here in the BA profile. I could see racking onto peeled and pureed guava giving you the most bang for your buck. What's the base beer?

    Slice them in half and use a melon baller to scoop out the flesh. Yes, it has to be a melon baller. Anything else is a compromise.

    might do a kettle sour and brett c ferment and rack it on guava after

    It makes a decent sorbet.

    I would have thought a guava baller is what you need, and a melon baller would be a compromise? :stuck_out_tongue:
