How well will this beer age?

    I'm curious how well this beer will age if it cellared. Should I just drink it now? The beer is dogfishhead palo-santo-marron in case the pic isn't working.

    It should age pretty well. How long you looking to age it? I did one for a year and it was good.

    FYI, this question is better suited for the Cellaring forum. And Palo Santo should age like a champ. :slight_smile:

    I love that everyone is bringing the new pic feature to it's full potential!

    Opened an '08 a few weeks ago and found it cloyingly sweet.

    I've found this beer is better with a year or so on it than fresh. I haven't tried one any older, although I do have a couple of these stored away. I think even fresh, Palo Santo is a bit too sweet. We'll see what happens.

    This beer doesn't age terribly well. I had some of the batch 1, and it didn't age well past a year. I'd give it 6-12 months to mellow out a bit; after that, too much else fades and you're left with a sweet, semi-boozy beer without all that makes it interesting fresh.

    My buddy and i are having a mini vintage night in a few weeks. He has few bottles from 2008 . Just have to open one and see how sweet this beer it.

    I had the exact same experience. Quite one-dimensional and the cedar lactones were not doing much to help.

    Yeah, I aged some for a year or so and ended up with some really odd vegetal notes. I think 6 months or so, like Thorpe suggested is the sweet spot for this beer.
