Hull Melon Saison critique

    I've never brewed with this hop before but I wanna do a single hop saison and I want it to be super dry please let me know what you think and if you have experience with this hop let me know if the grain bill will be ok

    German Pilsner 87%
    Rye 4%
    Flaked oats 9%
    .30 Oz hull Melon @60
    3.00 Oz hull Melon whirlpool/steep 30 min
    10 Oz dextrose at end of boil
    Wy 3711 french saison yeast
    Dry hop 2.00 Oz hull Melon for six days

    looking for around 25 to 30 Ibu

    Looks awesome to me. 3oz of finishing hops is over the top obviously for a traditional Saison, but I think it will taste great and give you a good idea of what the Hull Melon flavor profile is like.

    I like my Saisons with a little wheat, so you could add that if you wanted too.

    Have you ever used 3711?

    You want super dry, what "number" would that be in your head? 1.000?

    3711 is a BEAST of a yeast strain. If you mash low, around 148-150, it will take you beer down to under 1.005. I've gotten it to 1.000, 1.002 plenty of times, and once got it to stop at 1.005 I think it was in my white wine saison but I stressed the heck out of the yeast and under pitched to get more esters.

    I'd nix the corn sugar unless you just want the alcohol boost. It won't help with drying the beer out that much, with 3711 working. Also, no real need to add it at the end of the boil, you can add it whenever you'd like if you intend to keep it in the grist.

    If you want it to appear even drier, the rye will help. I'd kick back the oats, and up the rye. Do 9% rye and 4% oats, respectively.

    I haven't used Hull Melon, but I want to try it in a german pils, or a CAP soon. Report on the hops once you use it.

    If I was trying to highlight the hops I would probably drop the rye, but that's just personal preference.

    thanks for the suggestion so far I did think about dropping the Rye because of the hops but then I tried Allagash saison and they put a little bit of rye in the grist and I really like it. will that yeast strain really dry the beer out to bone dry without any sugar?

    I would keep the rye but get rid of the oats, IMO they muddle hop flavors

    BTW where did you get the Hull Melon hops?

    Do some searching about 3711 French saison here, and elsewhere even.

    It will thrash your wort, and make it dry. Mash low, and long, and you'll get it to 1.000-1.003, so keep that in mind when putting your grist together.

    I'll beat @AlCaponeJunior to the punch and say that you should make it a SMaSH.

    Everyone is correct in saying that this yeast will dry out your wort. I've gone from ~1.075 to under 1.008 with it, and that was with some crystal in the grist.

    thank you everyone for the suggestions especially to use of the corn sugar I think I will eliminate that as it sounds like this yeast strain is crazy. I'm going to brew this Saturday and I'll report back when the beer is done to let everyone know about the hops and how it came out overall

    Used Hull Melon in a hop experiment. Love that hop. Definite strawberry aroma and flavor!!

    Brewed last night. 10 gallon batch with a bunch of finishing hops. Split and pitched 3711 in one carboy and San Diego super yeast in the other. Probably won't dry hop the saison but gonna dry hop the hell out of the single hop pale. I'll report back soon.
