I think I completely Screwed this beer up!!

    So I did an extract recipe for a DFH 60 minute clone.

    4 oz caramel 60L
    4 oz special roast
    9 lb LIght LME
    Whirlfloc tablet
    1oz Warrior at 60 min
    Then it said do 1/4oz each Warrior, Simcoe, and Amarillo at 30, 15, 10, 5, 1 minute. And again in secondary as a dry hop.

    The recipe shows the OG as 1.063-1.064

    Of course I , in my stupidly infinite wisdom, decided to take the 1/4oz of each and set it aside for dry hopping. Then, after the 1oz Warrior at 60min. I split the remaining 1.75oz of each Amirillo, Simcoe, and Warrior and split them into even 12ths so that I could add hoops every 5 minutes starting with 55 and ending with 1min. So, in short (too late) I used 1/2oz of each hop variety more than the recipe says totaling 1.5oz more than the recipe calls for and spread them out more as well. I'm thinking this beer is gonna suck and I wasted $58.

    Also, my OG turned out to be just 1.054. Could that be because of the hops?

    What do you think this beer is going to turn out like?

    Good news is I like hops. I'm just nervous how bad this will be. Maybe I just skip the dry hopping?

    :confused: I think I'm confused...can you just post the hop schedule that you ended up using? Might be easier to give you an answer...

    it wont suck. more hops make - hoppy beer. this is a good thing. dry hop it, drink it, never look back. next time have someone double check your math.

    hops and OG not really related. did you cool to room temp before taking your og? high temps skew your og readings. did you have a lot more wort than you expected, ie did you not boil off as much as you thought you would?

    1oz. Warrior 60min
    .146oz each (1.75oz of each divided by 12) Warrior, Simcoe, and Amarillo @ 55min, 50, 45, 40, 35, 30, 25, 20, 15, 10, 5, and 1 min.
    1/4oz each Amarillo, Simcoe and Warrior set aside for dry hopping in secondary

    Yeah. I actually cooled first. BUT I had more than 5 gallons remaining. Definitely didn't boil off as much as I probably should have. Or I started with too much. Great point! Thanks.

    You might turn out with something great. Of course you're not maximizing efficiencies but who cares. I tried to plug this into an IBU calculator and had difficulties because of all the additions.

    I agree with the others, it will probably be fine, just not exactly the beer you set out to make.

    Unless you had alot of extra water or there were air bubbles during your hydrometer reading your gravity should be around 1.07. Your beer will be fine.

    If you are trying to "re-create" this beer because you need it to taste exactly the same as the last batch of this beer then yes it is screwed up and you probably should start a new batch.

    If you are just brewing for your own pleasure to drink with friends then you are fine. Lots of people experiment with hop schedules/quantity, and different gravities and come up with nice/better beers that the one in a recipe.

    I would still dry hop it, Simcoe is good stuff !

    You didn't screw up, but it's going to end up being way more bitter than 60 Minute. DFH website lists 60 min at 60 IBUs. The Warrior alone for a 60 minute boil will give you something very close to that. I'm sure it will be good, considering the hop varieties you're working with are quite nice.

    Thanks guys. I actually plugged in the entire recipe into hopville and since I had more volume than i expected I changed it to a 6 gallon batch. The avg. IBU shows 116. I'll go through with it. It's a learning tool now.

    My local brew guy told me I need to be way less "high strung" about my brewing. I think I am that way because it is $58 worth of ingredients for a beer I absolutely love (60min) so if I screw it up it's a loss when i could have bought 2 cases for that much. But it's part of the hobby I guess. I'm actually looking forward to the outcome now that you all commented. I'll keep you informed.

    you didnt screw it up, it sounds like you made hop bursting bad ass. you should relax drink a homebrew and make more hoppy goodness, send one my way and ill enjoy it.

    I wonder if you are allowed to ship beers. It would be cool if a group got together and shipped a bottle of their latest to each other.

    RDWHAH! It's going to be just fine. The flavor is going to be there it is just not going to be the same flavor BUT! That is not a bad thing! let it just play out and see how it turns out! Not really sure about your OG what temp did you take the reading at?

    Well I just put this beer into the secondary with the dry hop addition. I tasted it first and it is really quite hoppy! I dry hopped anyway. I believe someone told me that as it ages it could become a little more mellow as the favors condition together. I'm really excited to try it next week as I bottle.
