I'd like to SMaSH it

    For my next beer, I would like to try a SMaSH IPA for the first time.

    I am thinking:
    Maris Otter
    Simcoe
    Kveik yeast

    What would you do in this case? I've always thought of Simcoe as a good 'all-around' and thus perfect for this type of beer.

    For me, a Smash brew should be to discover one ingredients potential, and my Smash recipes are austere.

    So, Kviek yeast? If you want to discover that strain great, but then go with a neutral hop and a middle of the road grain, though MO is not at all over powering. If you want to see what Simcoe is all about, drop the Kviek. Simcoe is dual purpose yes, but probably not the first choice for "neutral".

    That's just one guy's opinion. So no worries, otherwise sure. Do it. On second thought, this should work nicely.

    I think it would be tasty. Not sure which Kveik strain you're planning on using, but when fermented at normal ale temperature range, they tend to be fairly neutral.

    Yeah, I'm debating the Kveik right now (not sure which brand would be available) - I've read that it gives a citrus flavor, which seems like it would go well in this beer, but as billandsuz said, maybe I want to use an even more neutral yeast to really highlight what the simcoe can do.

    I was between Simcoe, Citra and Mosaic, but I think I will indeed go with Simcoe.

    If you’re wanting a very neutral kveik, go with Lutra fermented at room temp!

    Not a fan of that yeast. I’d go with 05 or Nottingham

    You are referring to Lutra here?

    What don't you like about Lutra yeast?

    I'm taking a look now at my supply site (which has been closed for maintenance/the holidays), and the two Kveiks avialable are Voss by LalBrew and Mangrove Jack M12. They also have Nottingham.

    I also just saw they have both cryo and pellet Mosaic, which might be an interesting way to work with a single hop.

    Lalbrew Voss Kveik definitely has a certain flavor profile, fermented at "normal" and high temperatures. All citrus.

    I would also go with Nottingham or US-05 (although I'm not a big fan of Nottingham.)

    Kveik yeasts in general just aren’t for me.

    Jack, I have used some of the Keveik yeast and did not like the beer they made better than my go to yeasts, being, nutty, 05, 04, wiyeast Irish ale and others.

    does that narrow the sight picture enough???
