Idea for a "one year" beer?

    “Just out of curiosity...are beers sealed with wax completely closed off to O2 exposure?” Nope, if age your beer for 1+ years there will be plenty of O2 ingress into your bottled beers; through the wax and through the cap liner.

    “Is it even possible to completely close a beer of to O2 exposure?” Only if you can your homebrewed beer. Last year my LHBS had a canning day where they brought in a mobile canning service to the store. You had to bring your homebrewed beers in a corny keg for the canning process.

    “What reactions might happen in a non-waxed bottled that wouldn't in a waxed bottle (or vice versa)?” The wax will provide an extra layer for the O2 to permeate through but that is about it.

    You actually want to have some O2 permeation since that will create interesting aging flavors from the oxidation process; flavors like sherry for example.

    I have three 6-packs left of a Quad that I bottled on 5/14/13 so that beer is approaching 2 years of age. From one year in the bottle until today the aging related flavors from oxidation processes is very interesting; a pleasant combination of sherry and dark fruit flavors in this beer.

    Did you can any of your beer when your LHBS had their event? That's a pretty cool idea.

    No, I am happy/satisfied with my bottle conditioned homebrewed beer.
