Ideal Local Brewery

    If any style brewer could open up a brewery right by your house, what kind of Beer would you want them to specialize in? Add as many details and reasoning as you wish. ready, set....go!

    Saison, it's one of my favorites and there aren't a on of great ones readily available.

    Id say Irish or german beer styles. I love Irish pubs. it adds to it. But i also love german styles. And seasonals. So its for me a euro style brewery. That does seasonal releases.

    A wide variety of beers, with some American and traditional German styles and a penchant for experimentation. Galaxy was close to that for me in Binghamton, and it's looking like I may have an ideal place coming in Bottomless Brewing (http://www.bottomlessbrewing.com/menu.html) now that I live in Geneva.

    First choice would be a brewery dedicated to various Belgian styles as produced by breweries such as Rochefort, Chimay and Rodenbach.

    I think the best we can hope for in the States is that they always have a cask version of a few of their beers available at the tap room. Even with a 15 barrel brewhouse they would have to move a lot of beer to make the system viable, and the timing would be off keeping it all on cask. There are breweries that will sell keg and bottle versions of their beer, but the locals get the pleasure of also having access to the cask stuff (Yards, for example).

    Best experience I've had with your example was the one time I was at Victory. Uncle Teddy's and cask Summer Love... too bad I was only there for one lunch with the family while driving through - I would have pitched a tent in the parking lot otherwise.

    When I first visited Portland in the early 90s a lot of breweries followed that model, too. Sometimes you'd even get to compare the same beer served the two different ways- and there was a surprisingly big difference, too. I think that sort of thing works where there is a lot of foot traffic in the tap room, and the kind of people who drink pint after pint. I can see it happening in NYC, but maybe not in the 'burbs.

    I would love a local brewery that specialized in rauchbiers. Schlenkerla quality, locally produced--sign me up.

    Would love to see a brewery do some Belgian style beers!

    Honestly though, my ideal local brewery would be a place that brews only a few solid beers. They don't try to over-reach, they stick to their guns and brew GREAT beer consistently. That is my main concern is the quality of the beers, not necessarily the style or quantity.

    An added bonus would be adding fried pickles on the menu (but that's just me being selfish:rolling_eyes:!).
