    Given the clamor for fresh IPAs around here, I'm quite surprised that isn't a more common answer...

    I would take a brew pub that made really good, classic bar food (wings, pizza, etc) and an ever-changing seasonal lineup. I'm a big fan of drinking with the seasons, so right now I want them switching from Kolsch, pale ales, and saisons to Oktoberfests, brown ales, and pumpkins. Then hit me with the stouts in a few months!

    While it's not down the street, it's close enough. Steady Habit caters to my IPA desires in ways akin to Mariah Carey brushing my hair circa 2004. I am in love, if only temporarily. Live now.

    Belgian and British style ales.....big and tasty Belgians mixed with smooth and session-able British ales.

    Well, I sort of already do. In my town are several breweries within walking distance, and all fill a different niche: Boundary Bay does "traditional" NW-style Ales; Chuckanut nails Lagers perfectly; Wander makes a wide variety of beers, and puts their own twist on each; Kulshan does really well made American Ales; Aslan makes a variety of styles, each one all-organic. we also have several more coming online in the next year-ish. Once Stones Throw is open, the farthest distance between two (Kulshan & ST) is about 4 miles. The rest are within 1-1/2 to 2 miles.

    I wish a brewery would open up near me that made an IPA, a pale ale, a blonde, a brown ale, and an amber/red ale.

    Hoppy beers and sour beers. I love going to Russian River brewing (not local for me) and focusing on one side of the menu. Hoppy beers on the left and sour beers on the right. Terrific!

    Rather than a single style, I would want a world class brewery that covers many styles.

    Definitely, there are even less great fruited saisons out there.

    Nailed it. I was going to say I just want Tired Hands to open a branch next to me. My ideal brewery. The kind of beer I would make if I could make beer.

    TiredHands did the "Emptiness" series and it was killer. The fruited Flora variants were also amazing I hear. I am especially excited because I have a SideProject Peche Fermier I need to open, I think it's goign to be sooo good.

    Aw man, some good real ale. There would be pretzels and pickles too.
