Ideas using cultured Ommegang yeast

    Just cultured some yeast from Ommegang Brewery's Hennepin Farmhouse Saison bottle conditioned beer. Any ideas to do something with this yeast?

    I believe they use the same yeast in Rare Vos...so maybe a Hoppy Belgian Amber/Pale?

    How long does cultured yeast store for?

    Isn't that their house yeast? If so, you could make any Belgian beer practically. Also, if it IS their house yeast, next time try culturing yeast from a bottle of Witte instead for less-stressed yeast (5.2% vs. 7.7% ABV).

    The yeast appear to have multiplied but I haven't seen any activity similar to a yeast starter. The yeast look clumpy on the bottom of my mason jar. The temperature in my condo is 70ish degrees. Is this too cold for a belgian strain to propogate?

    With such a small amount of yeast (bottle dregs), I wouldn't be surprised to not see/catch any activity. My recommendation would be to decant, step it up, and see what happens.
