If my beer is cellared wrong...

    wtf?
    if you stand any bottle right side up it should taste like ketchup
    if you lay it flat it will taste like mustard

    You could expect it to be anywhere from just fine, to skunky, to one dimensional and bland, to being vinegar. Light and heat are your biggest enemies, followed by too cold, and then too humid (can cause caps to rust and leak).

    Vinegar is caused by acetic acid. You cannot cellar a beer "wrong" and produce a vinegar flavor, unless your idea of cellaring is opening up your bottles and dumping in come acetobacter or equivalent.


    Typically, beers that are cellared "wrong" taste skunky (lightstruck) or have flavors of cardboard, paper, lipstick, honey, sherry, bread, or diacetyl/butter (oxidation).

    Light, heat, and cap leakage/degredation are your enemies.

    I wonder about this too, although I'd be a bit more specific than the OP.

    All of my beer is stored in the dark and upright, but the temperate is between 65 and 70. I currently live in a one bedroom apartment and unfortunately have no cooler place for storage other than the fridge which I don't have the room in.

    Will the above recommended temperature have that much negative effect?

    Sounds like conditions are a little better than the shelf at your local beer store. I guessing that it depends on how long you will be cellaring. I've had beers that were kept in similar conditions for years and they have been amazing. Most recently a 08-09 Darkness.

    It is if you live in a one bedroom apartment.

    I'm moving to a bigger place in May but until then, my cellar is a closet. Bottles are upright and darkness is constant so that's good, but the temperature is a challenge obviously. As much as I'd like to I can't exactly turn it into a refrigeration unit.

    Can beers cellard wrong have a "well water" taste to it. Particularly in stouts or porters.?

    Do the best you can to cellar properly and just know that the warmer the beer and the more light its exposed to should deter,one how long you gamble aging something for.
