    Visiting family in Asheville yet again this winter, could ask about new breweries, but there’s already threads for that. No let’s have some fun! If you could visit ONLY ONE Asheville brewery on a trip which one would it be and why?

    Doesn’t have to be new, but yes only one! That’s the fun/challenge of it

    I really enjoyed Cellerast when I was out there this summer - it was nice because the styles available were not the ones that you see everywhere (minimal IPA/Stouts/Fruited Sours).

    Prayer for me/send positive vibes, my extended family doesn't like Zillacoah and I love them. trying to scheme my way over there

    FWIW my vote from my last visit would be Eurisko. Excited to see what is out there this time around!

    Zillacoah is about the only brewery where I haven't found a beer that I say to myself, "I've got to come back for more of this", and we've been a number of times because we meet friends there. They aren't bad, just do nothing for me.

    Now half a mile up the road at Riverside Rhapsody, they are a number on their tap list that meet the "I've got to come back for more of this"

    See my experience was flip those 2. Guess I will have to try both again, it’s clearly the only reasonable thing to do!

    I haven't been to many of the Asheville breweries, particularly the new ones, because every time I head in that direction I make a beeline for Zebulon. As I have noted on another thread, my view is that the craft brew scene in recent years has been negatively impacted by breweries swarming toward conformity around the hottest styles.

    What I love about Zebulon is that Mike Karnowski just does his own thing and you will always find interesting brews on tap, as a result. I have been following him since his Snozzberry days at Green Man and he never disappoints.

    The only “issue” with Zebulon is their very limited hours which are 1pm-6pm Friday and Saturday only.

    Monday through Thursday, 6am to 3pm is all I want. Ham, eggs & foeder.

    Burial, their beer is amazing. They get crap for making a lot of hazies and pastry stouts but they always have a few lagers, saisons, and other classic styles on draft too. Their South Slope taproom is very unique and I like the design and atmosphere of the place. And they have food.

    Cellarest. AFAIK, no one else in America, save perhaps NSH's Barrique, is all wood fermented or wood rested. Almost everything is low ABV, and the wood adds a heckuva lot of narrative character to the beers. There's nowhere else like it. Next: Zebulon (Fri-Sat only) and Zillicoah (when the weather is warm).
