IIPA recipe aftermath thoughts

    I'm looking for some advice on a Double IPA that I brewed. I missed my gravity because my crush was too coarse, (working on the grainmill), and too much post boil volume. I had about an extra half gallon.

    OG: 15 brix 1.061 post boil Predicted 1.074
    IBU: 76 from a 90 min boil

    Grain bill:
    13 # American 2 row
    1# Munich
    #.75 crystal 40
    #.75 GNO Golden Naked Oats
    #.5# carapils

    1.5 oz Magnum for 90 min
    1.5 oz both Citra and Equinox for 5 min
    1.5 oz both Citra and Equinox for hop stand

    Mashed at 152 for 40 min.

    1.5 Satchels of rehydrated US-05. I'm hoping a shortened mash time, higher mash temp than most of you would use, and some sweetness from the GNO and the crystal will help the low gravity. Thoughts here?

    I had planned on adding #.75 of sugar after high krausen. This was actually calculated into my OG too. That would put me at about 1.068, but I'm not so sure I want to now. Any thoughts on raw sugar additions? I know I'll be keeping more DME around the house for days like today. I'm considering dropping about 6 oz of hops into primary. 1 oz each Citra and Equinox and 4 oz of Amarillo. Maybe this should just hide my mistakes and I'll chug this beer at the beginning of 2016.

    The best part of brew day will be getting the soggy hops off of me. Time for a hot beer and a cold shower--Or something like that.

    Adding 0.75 lbs. of sugar will indeed increase your OG and it will completely ferment out as compared to malt.
    What mistakes are you anticipating in the finished beer?

    So, you ended up with a higher volume of a lower gravity than you expected beer. Are you worried about the IBUs relative to the gravity? I would just go with what you have, call it an IPA and move on.

    Next time pay more attention to the crush :slight_smile:

    Shudda saved the extra half-gallon for the après Hi-K addition.

    On occasion ... I come up a wee bit short of wort for the fermentor.
    I chill the trub overnight then draw off the clear wort.
    Once Hi-K has passed ... the recovered wort is boiled ... cooled ... and added to the fermentor on or about D+3.

    Low gravity and high IBU
    I've got 76BU:61GU, and I wonder if simple sugar would pull this in the wrong direction


    I currently plan to save the extra half gallon for bottling. I need to get some of this over to family while it's fresh. I'll see them over Christmas, and won't see them until February after that. I'll do better next time. :slight_smile:

    The bitterness might be a little unapproachable. It may be the sort of beer that sits around in the keg for a while, until the bitterness fades. However, I love GNOs and munich in a pale ale. I usually use less crystal, but maybe it all works out perfectly with the bitterness. I'd have concerns about missing the intended mark, trying to figure out what is going on in my brewhouse, while remaining open to a happy accident. I'm not all that keen on high gravity IPAs anyhow.

    Right now the BU:GU ratio is 1.2. If you add 0.75 lbs. sugar the ratio would be 1.1. This is an inconsequential difference IMO.

    I think @wspscott had a good suggestion of: "I would just go with what you have, call it an IPA and move on."
