I'm bored. What should my next brew be?

    I want something for New Years and I'm tapped out of ideas. Fermenting a blonde and porter now. Just killed off an oktoberfest, marzen, and red IPA.

    Any suggestions?

    Looking at it for New Years I see a beer to use instead of champagne.......I vote for a Belgian tripel with American hops. No need to age it, it's ok to be highly carbed(like champagne), is strong(like champagne), will have a dry finish(like champagne), and a simple recipe.

    12lbs pilsner
    1 flaked wheat/biscuit
    2lbs sugar either to end of boil, or when krausen starts to go down(my choice)
    your choice of American hops.
    Trappist yeast of your choice

    I did this with Summit, Citra, and Amarillo and it was ridiculously good!

    How soon do you want to be drinking it? Seems like you have stuff in the pipeline, so maybe you can think long term and do something bretty.

    I second this. what og did you shoot for as well and what yeast? i've been using the wyeast ardennes strain

    Some late hops might make that a little more drinkable at 5 weeks old.

    I'm not at my notes right now, but I'm guessing it was close to this:
    1oz Summit @60min
    2oz Citra @1min
    2oz Amarillo @2min
    2oz each of Citra, Amarillo dry hopped for 4 days. I was sipping on these as soon as they were carbed, kinda like a Belgian IIPA.

    I used Chimay yeast

    OG was around 1.08-1.09-ish, FG was pretty low, probably 1.010-ish.

    Probably 2 weeks to ferment, 3 at the most. It should be ready by the New Year.

    Old Ale with Brett C
    Brew a Flanders red with Roeselare and hit it with some cherries and raspberries in the spring

    I've done a rye mild in the past, it was dope.

    Maybe something along the lines of DuPont Avec, but using 3711 for a quicker turnaround?
