Has anyone tried using an immersion circulator to brew? It maintains a constant temperature to 1/10 degree. I'm a chef so this makes sense to me, but I was curious.
For maintaining mash temps? The kind of immersion circulator that I use in the lab actually circulates the water through the system so I'd be worried about it getting clogged and cleaning issues. Also : from my experience an igloo cooler does a fine job of keeping mash temps within a couple degrees so I'm adopting the "if it ain't broke don't fix it" stance on that. I've also maintained mash temp fine by sticking the entire kettle with mash in a low oven. Give it a try though and report back your results.
