Imperial Cream Ale?

    Wouldn't an Imperial Cream Ale be the same thing as a Malt Liquor?

    Of course, it wouldn't be difficult to make a better quality Malt Liquor than the pros, so I'm not crapping on your idea unless you add jalapenos.

    Ok so here is what I'm working with so far. 1.061 og and cluster hops to 23 IBUs.
    79% 2 row
    11% honey malt
    3% melanoiden malt
    7% flaked corn

    I took recipes from two different cream ales I've liked and kind of mashed them up. Would this make a tasty brew?

    11% honey malt is going to be pretty sweet. More melanoiden, less honey malt and add 8-16oz of sugar unless you want a sweet beer.

    I have never brewed a Cream Ale (non-imperial or imperial) but if I were to brew a Cream Ale I would choose to keep the grain bill simple: 2-row (or 6-row) and flaked maize.

    I remember one of the regulars on the board stating that he switched out the flaked corn for table sugar on his cream ale once, and will continue to do it in the future.

    I'm planning on brewing a cream ale this winter, but using the Trader Joe's malted, cooked red rice (not the actual product name, but what it essentially is) as the adjunct portion.

    Yup. there are indeed other adjunct choices.

    I homebrew a CAP every year (I will be brewing another batch in a few weeks). I like what corn provides to beer; a subtle grainy sweetness that I think adds some complexities to the resulting beer. I once thought about trying to brew my CAP with rice but that thought did not last too long; I enjoy brewing with corn.

    I would go with Pilsner malt over 2 row, scrap the honey malt, and work some table sugar into the recipe.

    It's a best practice to. I usually do a 75 minute boil when I use pilsner malt. Some do a 90. I do think the Pils is crucial though, if you want something that resembles a cream ale. 2 row won't be light enough.

    Changing my recipe now. They have a new chateaux pilsner malt at the homebrew store that everybody has been talking about. I reckon Ill give it a shot. Do you think that a 4 gallon batch will have enough headspace in a 5 gallon carboy?

    Although I haven't been fortunate enough to try it, I've heard awesome things. A 12% cream ale that tastes great too can be done!
