    It's likely the coffee, as it can develop vegetal flavors (typically green pepper). Don't age coffee stouts.

    I find a lot of old coffee stouts taste like green pepper. Something about the way the coffee flavor ages. Not all, but a lot of them.

    Was gonna chime in with this @Resistance88 .
    Coffee can go to green pepper over time, not spicy pepper, but raw green pepper notes.
    That would be my guess. And my condolences for your bad beer.

    Yep. Was just out visiting with family in St. Peter MN and saw the same thing. The local liquor store there had a fairly decent craft beer selection, a few imports and then this huge display of BCBS variants. I couldn't believe my eyes. St. Peter is this smallish college town with one decent beer bar in town and pretty much nothing else. It clearly is not much of a craft beer town, and yet here was the largest selection of BCBS stuff I'd ever seen (all left over from Black Friday presumably).

    Still selling for the regular price though. Despite the fact they were turding up the store, there was no discount offered.

    I didn't age this it in November from brewery . I knew not to sit on coffee stouts for long but i had the same beer in august i bought somewhere else and it was Great. The flavor wasn't of green pepper at all i believe its something else. I had a Straightjacket this month that had the exact came offf flavor and there is zero coffee in SJ .

    I don't think this is the case because of how it was exactly the same as the no coffee having 2019 Straightjacket i had this month. Some weird ass boiled cabbage flavor. I will get down to the bottom of this!

    I figured I better get one down, cloudy and rainy, bike ride done, so WTF?
    Another Impy Stout from a local, Holzlager. This time it's just a plain old Russian Imperial Stout.
    Thick pour, no light passes thru, a small tan head was gone in a flash. Lotsa roasted malt on the nose, not much else. Taste buds get some coffee, chocolate, vanilla, maybe a bit molasses. Goes down very easily. What's not like![​IMG]

    The "green bell pepper" flavor is caused by coffee. Especially espresso and when it's aged/old.

    I dont know how many times i gotta say it wasn't green bell pepper and a Straightjacket Barleywine i has earlier had the same flavor. It's probably some infection type shit

    Must have been green pepper from the coffee. That can happen to beers with coffee that get old.

    My guess is that the flavor your describing is what people often call "wet cardboard" and results from oxidation impacts I think.

    Throwing this back in track: had Rolling Blackout on tap yesterday at Mumford ( great local brewery here in LA) ...a coffee and vanilla american stout at 7.6%. It was the only stout on tap, by then i was fed up with the 5 ipas i had abmns boy i enjoyed it. Another Vanilla BA Imperial Stout i have had was Oddside Ales 12 Anniversary that one blew my knee high foosgonewild socks off. The best vanilla cocoa stout i have ever had. Seek it out abd drink it. It was like having top tier chocolatier fudge .
    Heading out to stone to share a 2017 WootStøut with the crew and have something on tap.
    Will post notes and photos.

    Notes of fudge , roasty coffee, caramel, sweet poonani and a faint hop bitterness that compliments everything well on the finish

    It's a function of oxidation. Low DO levels prevent this, that's why the better breweries rarely have these issues.

    What about green peppers? You say green peppers and I think mom’s Hungarian goulash. Nobody’s been able to replicate that yet.

    On point: This Skygazer Sightings Go Fast impy stout is a pretty hefty brew. A sleeper. Seems like nothing but it’s so stellar (hah…stellar…Skygazer…) you don’t realize how good it is until it’s gone.

    Bottled 6/23/2017 A good year for this beer, last i had this was 2019 and it was....different. im excited for this.
    2017 Stone Farking Wheaton WootStøut.

    Imperial Stout with Pecans, Wheat, Flaked Rye and one quarter aged in Bourbon Barrels. 13% ABV .
    Stored in a temperature controlled private cellar till i was gifted it a few weeks ago.

    Nose is all i love about Imperial Stouts. Fuck me. Its Dark Chocolate,Caramel, Vanilla, Brown Sugar, Sweetness from what I assume is Bourbon Barrel.

    Looks damned Great. Pours like oil,Thick and creamy. Settles nice into the glass like a still oil spill with a deep brown ring of head.

    Taste marches well behind nose. Chocolate ,Vanilla,Tobacco, Little bit of Rye Spice, Coffee, some Nuttiness, Dark Malts . Everything i love in a Stout.

    Feel is a dream. Not too thin not too chewy. Taskes a while to go away in the mouth like a stranger you aren't sure you want to leave yet. I say near perfect .
    4.75/ 5 all day. This is when a great year for this one.

    Well Im back on my new favorite thread. Here is Oil of Aphrodite (non barrel aged) imperial stout from Jackie Os in Ohio. Brewed with walnuts according to the label. Definitely a solid Big Beer brewery and would recommend trying some of there stuff if you can.
    This brew is courtesy of a swap with @Artizen , thank you! I think it is the last bottle I have left from our great trade. This beer is 10% ABV and drinks like 6%, so look out!
    Onto my review:

    Sampling a cellar temp 12.7 oz bottle from 2020. Been in my cellar since January 2021 and well taken care of prior to the trade that sent it my way.
    Ive poured into my trusty snifter and the beer pours a pure black coffee color with almost no light passing through, only on the edges do I see hints of mahogany color. A dense tightly packed tan head of about 1 cm foams up and has faded to a sturdy surface covering quickly after the pour. This covering does stick around and leaves dense lattice when I take a sip or swirl the glass.
    Aroma is dark malts with some dark chocolate and bits of charred malt and some nutty notes, not a sweet hit like peanuts or hazelnut, definitely more earthy. I may get a little anise on the nose too.
    First sip reveals a smooth textured medium bodied beer. The carbonation is very vine and gently rolls across my palate. Feels very smooth and easy to drink for an ABV of 10%!
    Flavor is sort of what nose advertised with some additional flavors too. Roasted malts and dark chocolate with a bit of light coffee and again char are up front. This moves to some earthy nut flavors that linger a bit. I dont get any real hop notes nor any hint of ABV from flavor or any warmth. This beer is a sneaky easy drinker and another win from a solid brewery! Well worth it if you like bigger imperial stouts.

    So far I'm surprisingly a bigger fan of Jackie Os non BA stouts than their BA stuff from what i have had so far. Dark Apparition is one of my favorite Stouts, didn't enjoy their BA Version as much.
    I have Anvil Chorus ( Imperial Stout aged for 16 months) that i need to open that I'll be posting soon.
    They make some great things and for sure shouldn't be slept on!
