    Depending on the strain, his time, and his ability to make a good starter, perhaps. But 2 packs of dry yeast, will be MORE than enough healthy cells for that wort. I make a huge RIS, 14.5% that got there with 3 packets of US-04, and I over pitched and hit it with a boat load of oxygen.

    Appreciate all the feedback, as it really helped me dial the recipe in. I tasted the kiln coffee malt while building my grain bill at the hombrew shop and decided to cut back on it somewhat. I decided on the following recipe

    Estimated OG: 1.100
    Mash: 150 degrees for 120 minutes
    Boil: 90 minutes

    20lbs Marris Otter 84.2%
    1lb Chocolate Malt 4.2%
    1lb Roasted Barley 4.2%
    12 ounces Crystal 60 3.2%
    12 ounces Pale Chocolate 3.2%
    4 ounces Kiln Coffee Malt 1.1%
    2 ounces Nugget (60 minutes) 57.1 IBUs
    1 ounce Willamette (15 minutes) 6 IBUs
    1 ounce Willamette (5 minutes) 2.4 IBUs

    2 Packets of US-05
