Hi. I just kegged an American Wheat ale to which I added crushed cranberries. There were also 2 pounds of oats in the mash to enhance the earthy flavor, thicker body, etc. I've done this in the past and it was smooth and balanced. Due to storms and work and such, I wasn't able to pull the beer off the cranberries when I wanted to. As such, the cranberry flavor is more pronounced and a little more tart than I'd like. This beer is for a Super Bowl party. Are there any ideas about how I could improve the wheat flavor? I looked for wheat flavoring extracts, and there are some; however, none would arrive on time. I know that if it's slightly under carbonated the acidity won't be as pronounced, so that's one thing I'm going to do. Thanks for any other thoughts.
A little salt might cut down on the tartness. This seems to work for a gose. You could try pouring a glass and experimenting with that.
I like to use vanilla beans to cut down the tartness. In my fruited wheat just a half a vanilla bean in a 5 gallon batch makes a difference with minimal flavor change
The cranberry wheat I brew uses a Granny Smith apple and an orange to temper its tartness. Might could try dosing your brew with a wee bit of apple and orange juice.
