as a fairly new Brewer, I am still brewing my way around different hops and learning flavors. I just made a Belgian Single that I wanted spicy and woodsy but also some nice fruity citrus, so I used Liberty and Amarillo in there (also thought about crystal, willimatte, cascade for combos). Not exactly sure how it will pan out but hoping for the best.

What I was wondering is if anyone has used any interesting/unusual hop combos not often seen or used, and why they worked out or didn't?

I think that Simcoe, Cascade, Chinook, and US Goldings is an interesting combo that I like in an IPA... Turns out it's pretty close to what Sweetwater uses in their IPA.

The US Golding is an odd egg to the bunch, obviously Simcoe, Chinooke and Cascade roll together.

Single hop Cali Common with Northern Brewer...next time I'll use some Fuggles or Willamettes in tandem.

    50% Centennial + 50% Galaxy (+WLP008) = Melon Bomb

Awesome combo if you think you might enjoy drinking something that tastes like liquid canteloupe.

Pacifica, Galaxy & Sorachi = Citrus Rind, Passionfruit, dankness, lemon zest

Citra, Moteuka, Mosaic = berry, melon, lychee bomb

Apollo, Cascade, Pacifica = grapefruit, citrus, dank bomb, with hints of armpit and onion (last two if using a metric butt load of apollo)

Pacific Jade & Sorachi = a saison without saison yeast (citrus (orange and lemon) rind, pepper, spice)
