I'm trying to burn through my hops and I'm thinking of brewing an IPA but need some help with the hop combos. Any idea which of these work together? I'm going to bitter with a magnum so I'm asking about late hopping/dry hopping only? The grain bill is going to be a basic 2-row with a touch (<5%) crystal 20.

    Citra - 4 oz
    Calypso - 1 oz
    Pacific Gem - 4 oz
    El Dorado - 1 oz

I would use Cascade for the dry hop and Pearls and Chinook for the wort, but hey you should go with your gut feeling. The great thing about brewing is that you are always learning, and who knows? You may get a big time winner.

You could easily use all 4oz of Citra in an IPA, 2oz at FO and 2oz dryhop. My recollection of Calypso is that it was pretty "mild" so you could throw that in at FO also. Never used the other two but based on this thread http://www.beeradvocate.com/community/threads/lemon-drop-and-el-dorado.259561 it sounds like they would be good with Citra, so split that ounce between FO and dryhop.

    hope that helps

Citra + Calypso is great combo, I've done 1/2 and 1/2 with great results.

How did you use Calypso and Citra? Timings?

What did the Calypso add to the Citra vs. all Citra? Like I said above, I remember Calypso being pretty mild, I would have thought the Citra would completely dominate/overwhelm.

I'd throw it all in and see what happens! Do 1oz Magnum at 60, an oz each Citra and Pacific Gem in at 10 minutes or so, another oz of Citra and Pacific Gem at flameout for 15 minutes, then mix the remaining hops together, split them in half and do a double dry hop 8-10 days out and then 4-5 days out. I think the Citra will dominate, but the others should add nice accents. I'm a fan of a little Munich or Carastan in the grain bill to round things out too, but a little C20 shouldn't overpower the flavor by itself either.

I'm with ^DrMindbender on this. Late hop additions are wonderful and I've successfully mixed up to 15 hop varieties @ flameout/whirlpool/hop rocket with excellent results; mixing different hops at FO/whirlpool/hop rocket adds wonderfull complex hop flavors and aromas without being muddled as when adding too many varieties during the boil.

    Throw them all in!!!

Thanks for all the advice. I've brewed tons of batches and even a bunch of my own recipes with a lot of success but hop combinations and IPA's are something I never seem to get right.

50/50 in dry hop, 2 oz of each in 5 gallons. In Brett pales I'd do the two additions cold in Cornelius keg without dip tube at 7 days/5 days. Shake up every day a bit (no O2 in keg). In standard pales you can probably do 5 days/3 days additions at ferment temp.

Calypso is a beautiful hop, adds a peach-like, light stonefruit character to the mix .. think peach, papaya, apricot. You are right though that Citra is more aggressive but I like what it does at 50/50 usage.
