IPAs...CO2, Nitro or Cask?

    won't what we're calling "CO2" be carbonated with CO2, but served via "beer gas" i.e. about a 75/25 CO2/N2 mix? I don't know about short draw systems but believe most American long draw systems (including the one I once inherited in my brief bar-owning career) are designed for this (otherwise I think there's an alleged tendency for beer to become over-carbonated over time, giving rise to what some call "carbonic bite" in addition to excess foam in the pour, wasted beer, money down the drain etc. I also notice this tendency in my own home-brewed and kegged beer, over time).

    In any event, I prefer the standard American kegging system as a dispense for American IPAs and most American and German styles...but English cask dispense for english styles whether brewed there or here. Belgians, I think, are almost always better bottled & bottle-conditioned.

    Zombie Dust on cask, oh mama. I'll always go cask over CO2 if I can.

    co2 is better generally but nitro ipas are fun and I'll always try one if I see one because it's fairly uncommon.
