Ipswich Rye Saison

    I bought six Ipswich Local Harvest Five Mile Rye Saison's last week. I have no idea how saison's age. Its about 6.5-7% abv. I thought it was really good, so I have no problem drinking them all relatively soon. But if saison's age well, I would like to save some for next year.

    So, how well do you think something like this would age?

    I'd be skeptical of that one. I aged an Ovila Saison for a year and while it was still good, the spice notes had faded a good bit. At 7% you don't have much 'backbone' to help stand up. Maybe shoot for a six month time at most.
