I have a few beers that I'm interested in cellaring. I have a kegerator that I've been storing them in at about 38-40 degrees. Does anyone know if that's too cold for the flavours to develop/mellow/mix etc? The alternative is my actual cellar which can get up to 60-62 degrees in the summer.

    thank you!

60-62 doesn't sound like an issue at all to me but if I remember what I've seen posted elsewhere in this thread the fridge would work too, it would just slow things down unless you're talking active yeast - the 40 degree temp may be too cool for yeast to keep changing the beer. - cheers!

On Firestone Walkers website that they suggest storing the Parabola and Sucaba @ 40 degrees or lower. This seems lower than most other guidance I've seen but it's their product... I havent seen any commentary specific to these beers against at various temps... Or other Brewers suggesting such low temps...
