Just a thought - this is a cool idea, but the beers I’ll likely be pretty terrible by the time your son turns 21. Ask most people who’ve tried any BCBS ‘08 or prior in the last year or two - those beers in the vast majority of cases have noticeably degraded. And that’s at 10 years. You’d be better off looking for lambic, or maybe buying a couple bottles of whiskey barrels in 2012 which should be easy to find in coming years.
