    Shelf lambic: Tilquin, Boon, Oud Beersel, De Cam, Girardin, 3F etc
    or
    Your local or new / up and coming brewery's saisons, wild ales, berliners, goses, etc. Stouts or IPAs on top wouldn't hurt either. I'm pretty open, but some random ISO examples include Scratch, Boiler, Deciduous, Barrel Theory, Speciation, etc,

    FT: Cellar options below (stored in cool, dark basement). Ratios in your favor.
