You may not have the ability to talk pay but you can certainly recommend some sort of profit sharing. If you are going to make the brewery aspect more prominent and give the brewer more control then presumably you are going to increase sales. If the brewer's actions increase sales then tie those increases to some sort of bonus plan. The owners are in a win-win situation then. Seems like a good thing for you as well if you come up with a plan that increases profits and retains your brewer.

I noticed the OP is posting this identical question on "Talk_Beer" forums on the same date. Must be trolling everyone for answers.

    An equity stake.

I know you're not allowed to talk about money but, really, why else would a talented, hard-working individual tie himself down?

Bottom line, is the bottom line.
Regardless of the day the brewer had at work that day, good or bad, he has to pay his own bills when he goes home. If you can't talk money, and growth in pay, those that can discuss this have to be involved.

Why not ask the brewer what he would want for him to stay?

Or when the Brewer leaves, what was the increase that got them to go.
