I've been having some mash conversion/efficiency problems

    if i was hitting around 61% efficiency every time id be fine with that. I'm reading now and starting to wonder if my water is right

    Water (particularly in terms of mash pH) can affect mash efficiency. One small variable among many. Of course, that's recipe dependent, because grain bill also affects the mash pH.

    Good idea. Check that mash pH. Sweet spot is about 5.2 to 5.5.
