    Hi all -

Looking to brew a clone of Jester King's Black Metal. Has anyone brewed one, or have any thoughts?

Here's the thing - they put their recipes up online for home brewers. See: http://jesterkingbrewery.com/jester-king-homebrew-recipes.

The recipe they publish there for Black Metal is:
    OG: 1.085, FG: 1.010-1.015

    77% Pale 2-Row
    5% Roasted Barley
    4% Chocolate Malt
    4% Black Malt
    2% Crystal 60L
    2% Crystal 120L
    2% Brown Malt
    4% Carafa III

    Hops: ~40 IBUs of Columbus @ 90mins
    - 90 minute boil
    - Primary fermentation with Wyeast 3711 (French Saison Yeast)

Certainly they now use their house culture for fermentation, so the yeast/bugs are different.
BUT: also, their website (not the recipe section) lists the grains as MO, Crisp Brown Malt, Black Malt, and Rolled Oats. And the hops as Liberty, Chinook, and Perle. Seems like totally different beers.

    Any thoughts? TIA.

If I were going to try to clone this beer, which I wouldn't, I'd go with their posted recipe. That said, if you have the time and interest, brew both and see which one you like the best.

Just to close the loop - brewed the recipe they posted, and it is tasting great. Obviously not quite a clone, given the water and bugs that JK uses, but after 3 weeks in the bottle I've got to say that the flavors have come together nicely and it really is delightful.

I love JK beers and was just there a month ago (second time I've been there). I didn't realize that they posted the recipes. Did you just add the 3711 yeast, or make a starter first?

I just added it - pitched 2 smack packs (didn't have time to make a starter) into just under 3 gallons of wort.
