@jesterkingbeer would it be necessary to crush (or puree) the berries, since freezing them will break down the pericarp layers?

since fresh fruit comes with wild yeast/bacteria/microbes...would it be best to pasteurize the berries first, then freeze them....or you're depending on those wild yeast/bacteria/microbes to shape the beer into something unique?

I wouldn't have minded a sample. That's one thing I enjoy about JK, being upfront and honest.

What was wrong with Buddha's Brew? I still have a bottle. I was talking to one of the Buddha's Brew guys at a local market, he said he had one about a month ago and it was phenomenal. He also said he hoped to make another beer with Jester King.

I don't believe you. Please send me some.

Also Bonnie the Rare, all the Mikkeller collabos, Thrash Metal, Viking Metal, Aurelian Lure, Omniscience and Proselytism, Nocturn Chrysalis, and all the other JK beers I missed out on.

    Thanks.

I drank my bottle fresh and it was so vinegary I thought I might pour it over a salad. My girlfriend also said the same and couldn't even drink more than a sip. Obviously my experience is unique and I'm not faulting Jester King as I have purchased many beers from them before and since.

I'm confused? JK made an infected beer? Hmm?

“It is certain that the introduction of pure yeasts into industrial fermentation does not constitute the crowning achievement of a system that is henceforth immutable. It seems, for example, that if the application of the pure cultures method has improved the average quality of the beer, if it has decreased the chances of infection, it has given us beer with less character than before.” -- Marc H. Van Laer, 20th century Belgian brewing scientist

when night shift in MA had their somer weise go bad they provided bottles to friends to make pickles in. as long as you know that the beer is definitely going to go that way and not end up on untapped I would imagine someone could have a great time making preserves and pickles with this.
