I am new here and also fairly new to aging beer. I have a nice little starter cellar(2 cases of mixed 12oz and 2 cases of mixed bombers). I was able to pick up 4 bottles of Jolly Pumpkin Noel de Calabaza at a once in a lifetime type price. I know sours, those that are unpasteurized(like Jolly Pumpkin) can age well for years. Does anyone know what the optimal aging time would be for Noel de Calabaza? Also, Jolly Pumpkin La Roja(I got 2 bottles at a great price as well)?

I don't know the optimal aging time but just have fun with it and crack open when you feel like its been plenty time. They'll be out every year so have fun with it

I held onto a early 2011 bottle of La Roja which I just opened in December 2014. It held up amazingly well at over 3 years. Certainly could have gone on longer, too. I do not have experience with Noel though, sorry.

I'm currently holding onto a couple bottles of Fuego del Otono and one of Madrugada Obscura. I'd love to hear how the Noel ages.

I had a 1 year old Noel de Calabaza late last year. It was a great experience. Jolly Pumpkin beers age and change a lot. They are fun to experiment with.

I can vouch for the 2011 Noel being great when I had one at Christmas this year. If you got four bottles from the same date, I would say open one each year until they're gone. Or until you can buy more!

    This is good advice!
I have another Noel that I am waiting for next Christmas time. The only Jolly Pumpkin beer that probably changed too much after a year was La Parcela, but it became this funky, acidic sour. They are one of my favorite breweries (though I am not the biggest fan of 350ml bottles).

I imagine Biere de Mars hold up well too.

Just had a Oro dated 07/31/14 and it was awesome! Never had it before so I can't compare to fresh tho.
