Just started aging any thoughts?

    Bomb
    Pirate Bomb
    Parabola
    2 NC old stock
    2 KBS
    2 Breakfast Stouts
    1 Burton Baton
    1 Palo Santo
    2 Ten Fidy
    1 Curmudgeon
    1 Stone RIS
    1 Bona Fide
    1 BA Ivan the terrible
    1 Great Divide Espresso Oak Aged
    1 Liquid Spiritual Delight

    Haven't had most of the "big name" stuff I cellard. Just heard some if it was better aged. Any thoughts or suggestions?

    IMO Drink the Bomb's now. Just had a Breakfast Stout dated 9/22/14 and it was stellar. From I've read don't let that one go too long. Not familiar with Liquid spiritual delight and Bona Fide but the others are very worthy of laying down.

    Most people will recommend you drink the breakfast stouts fresh. It is good aged but the coffee flavor will fade, so if you are a big coffee stout fan drink now if you like your stouts a little more chocolately let it age. The hate on aged breakfast stout is something I don't get it's a great beer fresh and aged. If you choose to age give it 2 years.

    I picked up a 4 pack of 2009 breakfast stout at a cellar sale and it drinks like cold press coffee. So if you like that sort of thing let it age past 3 years

    I would also recommend you pick up the book vintage beer. It is really cheap on amazon and has lots of good information, wish I would have picked it up when I started cellaring.

    Get more than one Palo so you can see how it changes over time. If you can get it, World Wide Stout is great when cellared. I've had that one at 5 years old and it was stellar.

    First, buy Vintage Beer on Amazon. Second, always buy atleast two of every beer. No point in aging a beer if you do not know what its like fresh and think it would improve with age. Third, read, read and read some more. Go through old post here and just read them. Most things newer people ask, including myself, have be asked before... Do research, then ask if you cant answer on your own..

    Drink the Pirate Bomb now. That is one of the best beers I have ever had fresh. I just had a 2010 Curmudgeon a few days also also. Stellar beer.

    All of these can be aged and you may find the change "for the better" but that is definitely a matter of opinion.

    In my experience, I prefer fresh breakfast stout, Bomb, Espresso Yeti, KBS, and Ten Fidy -all of which I've had fresh and aged. Parabola, depending on the year, can be very good aged or fresh. Age the Old Stock, Curmudgeon, Stone IRS, and DFH offerings. Especially since they aren't hard to get more of
