KBS Aging

    I would drink it closer to room temp, personally.

    Also, don't age it. Please. Beer aging fetishists, AKA hoarders, are the reason this beer is so hard to find. Buy a few, enjoy them for a few months, and look forward to it next year. It makes me cringe to think of how much KBS is wasting away in people's cellars.

    Also keep in mind, if you plan on holding on to any for an extended period of time, make sure to cellar it in a place with little temperature fluctuation (my cellar is about 65 degrees and holds steady, and I've never had a problem with "bad" bottles) and no sunlight or artificial light.

    I've only had up to 4 year old KBS but seem to prefer it fresh. After a year or two I feel I lose the barrel character and coffee fades. Just my too sents.

    Wax it and throw it in a fridge. That's probly the best you can do. Scratch that. Just drink em

    4 years old is my sweet spot.

    I like mine fresh and with about 3 yrs..can't say which I like more but I certainly wouldn't say aging it for a couple years would be a disaster, I've never had any problems

    As you can see from the above advice, opinions will vay depending on their personal palates. I too like a fresh KBS, but an aged KBS is good as well, just in a different way.

    Last year I did a blind tasting with two bottles of 2010 KBS. I waxed one when I got it and the other was not waxed. Both were stored identically, and in appropriate temperatures, over the three years. While the un-waxed bottle tasted good, the waxed bottle certainly retained a stronger and more flavorful beer. I still picked up coffee in the waxed bottle. Granted, this is not a scientific level study, so take it as you choose.

    Gotta go with the majority here and say fresh is the best. The coffee note fades too much for my taste as the beer ages and it just isn't as good.
