I am about to keg a english brown ale that has been sitting in primary for a year. I finally got around to tasting it, and it seems good enough to keg. I would like to add a little something to mask possible defects, however. Does anyone have any suggestions for such a rescue job? I am thinking something besides the obvious fistfull of hops, such as an ancho chili or oak cubes. cheers
I guess I should have said "good enough to keg, provided I do a little something to it." I am really interested to know about people adding oak to the keg. I have oaked in secondary, which is surely the preferred arrangement.
But wat are you tasting that tells you it needs to have something done to it? i.e. what's the off flavor?
A little bit of high quality vanilla extract would probably be the easiest thing to do if you feel that you must do something. It might be better to just cut your losses, though. Depends on how much you value your time/keg space.
I'm guessing the off flavor is brown ale, and that's no longer exciting enough. OP, keg it and leave it be.
