anyone used these before? i picked some up from a recent order on farmhouse brewing and they sound pretty new, was having trouble finding much info on them. i was thinking about doing a quick extract beer with them using half wheat dme and half golden light dme and using an american wheat strain, as i'm seeing a lot of tropical fruit, pine needles and lemony being thrown around which all sound pretty appealing to me in a hoppy sessionable wheat beer..
Cigar city made a wheat beer with this hop. Check out the reviews. I found 5 reviews on another site.
i ended up using the danstar belle saison yeast & also added a bit of nelson sauvin to the mix - full extract recipe is here: http://www.brewtoad.com/recipes/kohatu-belle in the end, i wish it was a bit more hoppy. the nelson is more detectable even though i used a bit more kohatu - kinda wishing i woulda dry hopped it in the end as well as use more for aroma. seems like a mildly piney hop, pretty subtle. i do get a little bit of mango/pineapple-y flavor from it as well. i think it would maybe go better in something like a wheat beer or a pilsner.
Reading through some of the aussie homebrew forums confirms your results... most are saying Kohatu isn't as over the top in terms of flavors, as the other NZ hops.
“Kohatu/Citra/Galaxy” I brewed an all Citra hopped IPA a couple of years ago and that was the most potent hop that I have brewed with. I have some Galaxy hops in my freezer that I will use to make a Galaxy IPA. Given the posted statement of: “most are saying Kohatu isn't as over the top in terms of flavors, as the other NZ hops” do you think you will be able to perceive the Kohatu over the potent flavors/aroma of Citra (and Galaxy?)? Figured that this would be the best place to document my initial brew experience with kohatu hops. I decided to make a variation on Tasty McDole's Pale Ale where I wanted the bitterness of a pale, the hoppiness of an XPA, and the abv of an IPA...... 60% 2 row 23% pilsner 7% c15 (in lieu of c40, which I was out of) 4% carapils 4% wheat malt 2% acid malt 90 minute boil 11g batch @60 - 1oz columbus @20 - 1/2oz simcoe @10 - 1/2oz columbus, 1/2oz northern brewer NOTE: At FO, I actually removed all of the above hops from the boil kettle, chilled the wort down to 125F and then added the following for a 45 minute hop stand 3oz cascade, 1/2oz centennial, 1/2oz simcoe, 1/2oz northern brewer (45 minute hop steep starting at 1.065 OG 1.012 FG 34 ibu's 7% abv 5 srm fermented the batch with nottingham I dry hopped 5 gallons with the following: 1oz simcoe, 1oz centennial, and 1/2oz chinook The other 5 gallons was dry hopped with 1oz kohatu, 1oz centennial, and 1/2oz chinook So as you can see, I didn't use much kohatu, only used it on the cold side, blended it with many other hops, but also had the opportunity to compare the kohatu dry hopped keg to the simcoe dry hopped keg. This, to some degree, did allow me to isolate a qualitative difference due to the kohatu. What I can say though is that I found the kohatu addition to give a very distinct quality to the beer. To me it clearly had an enjoyable pine resin quality with supporting notes of lemon and lime that the other keg lacked. A little bit reminiscent of my past brewing experiences with motueka, but better imho. While this first use of kohatu didn't blow me away, I liked what it offered and look forward to using the hop again. Perhaps next time I'll make a SMASH beer with it, or at least make a beer that showcases it more.
I brewed an IPA that featured Kohatu as a major component of the hop bill: 12 gallons 90% 2-row 3.5% Honey Malt 3.5% UK Crystal 55-65L 3% cane sugar Mash at 152 US Apollo 18%AA 53g 60 min AUS Galaxy 14%AA 30g 15 min NZ Nelson Sauvin 11.4%AA 60g 10 min NZ Kohatu 6.3%AA 60g 5 min NZ Nelson Sauvin 11.4%AA 90g Flame Out NZ Kohatu 6.3%AA 90g Flame Out AUS Galaxy 14%AA 30g Dry NZ Nelson Sauvin 11.4%AA 60g Dry NZ Kohatu 6.3%AA 30g Dry WLP001 While I couldn't tell you exactly what the Kohatu contributed, I feel confident in saying that it has a similar tropical-fruity quality to Nelson and Galaxy. I believe Kohatu : Nelson Sauvin :: Cascade : Amarillo, if that makes any sense.
