Koko Brown Victory malt substitute.

    Hi guys I'm about to brew Koko Brown clone it's a Coconut Brown Ale,the recipe I pickled up from Homebrewtak site.

    Batch 5 gal.
    OG 1060
    FG 1014
    IBU 30.33

    2 Raw 8.5 lb.
    Victory 1.5 lb.
    Chocolate 0.75 lb.
    Carapils 0.55 lb.
    Munich 1 lb.

    Hops:
    Warrior 0.2 oz 60 min.
    Cascade 0.2 oz 45 min.
    Willamette 0.5 oz. 10 min
    Cascade 0.5 oz. 5 min.
    Styrian Golding 0.5 oz. 5 min.

    My local shop doesn't have any Victory or biscuit malt only I have available melanoidin malt and weyermann caraamber.To substitute Victory malt what ratio melanoidin and caraamber better use.Caraamber = biscuit,right?
    I'm thinking 7.1 oz melanoidin and 17.6 oz caraamber instead of Victory.

    Caramber is a 25 L caramel malt, not biscuit. While it might give you an appropriate color, it will be much sweeter than biscuit malt and probably would be wrong for this specific beer. On the other hand, a little caramel sweetness might be good for this recipe. You'll never know unless you try. If your two choices are caramber and melanoidin, I'd go melanoidin to get closer to the recipe, but it is also not the same thing as biscuit, and I wonder if I personally might prefer the caramber. I seem to recall using too much melanoidin malt once, and I think I'd be shy about using 1.5 lbs.

    There is a third option: if you have access to an oven, I would consider toasting your own 2-row malt to approximate a biscuit or victory malt. I'm sure you can find instructions with google. I believe toasting could get you closest to the recipe, if you have the time and space (i.e., access to an oven) to do the extra step.

    Regardless, it could be a good beer to me with any of these options. What yeast? How do you do the coconut?

    Thank you for the advice,
    I read that weyermann caraamber is,Weyermann's name for Biscuit.,there was a discussion about it on homebrewtalk I think.
    About the coconut I want to put 0.5 lb in a mash and 0.7 last 10 min. of the boil.

    Their website uses "biscuit" as one of the descriptors for melanoiden but nothing about the cararoma description says biscuit to me.

    Do you use flaked coconut? Toasted?

    I'm using unsweetened shredded coconut, toasted to golden color.

    Crisp Amber or even Brown would be a decent substitute, if available. Melanoidin is not very similar to Victory. Cheers!
