Kolsch /2565 strain

    I was wondering if anybody has any experience using this yeast in a hoppy pale ale . My grain bill is gona be 50/50 belgium pilsner and 2 row give or take a few pounds of cara foam and flaked wheat I'm gona be hopping pretty aggressively with green bullet for bittering. Amarillo and simcoe late addition. I'm using up some fresh cascade hops in a chilled hop stand so I'm looking for a real bright hoppy finish. Any suggestions or experience with this yeast would be great! Thanks!

    I have only used 2565 many times to make Kolsch beers. It is a fairly neutral yeast but it does provide a very subtle white wine flavor which can be discerned in a Kolsch beer.

    Since 2565 is for the most part a neutral yeast strain there is no reason it wouldn’t make a good hoppy pale ale (but I would personally use something like WY1056/WLP001/US-05 instead). Your beer should turn out just fine using 2565 but I doubt that given your hopping schedule you will note anything of significance wrt 2565.

    Yea I have had some great hoppy beers turn out on 1056. A little winey may not be what I'm looking for. Thanks!

    “A little winey may not be what I'm looking for.” As a FYI, with all of the hops you are using you will not be able to taste the winey aspect.

    I would still recommend something like US-05 but 2565 would still ‘work’ if for some reason you want to go that way.

    I want a real danky bright beer and was thinking 2565 may be a fun yeast. 1056 may be my best option for the layers of flavor I'm looking for.
