I am new to home brewing, I have my first beer in the primary currently. I love the La Trappe Quadrupel and noticed that Austin Homebrew Supply makes a clone kit. My question is if anyone has used it or possibly knows of a place I can read some reviews of it? I have used google and can not find any good info on it. Any help is appreciated and thank you in advance.

What were the specialty grains? I don't think many people if any on here will have used this same kit. Many of the people here build their own recipes. If we knew what those grains were and which used we may be able to give you a better review and some feedback.

I think that with a big beer like this you will need to be patient. After racking to secondary leave it there for some time, then leave it the bottle for a couple months minimum. The key to making a good trappist beer (or any belgian to be honest) is yeast character, and in some of these darker recipes its the maltiness a bit. Belgian yeast produce lots of chemicals. But the key to these chemicals actually positely affecting the aroma and flavour is time. These chemicals are strong and potent. They take time to mellow, which they will as they are unstable and volatile.

I wish I had more information to provide you, but I don't. I have not made this kit, was just looking at potentially doing so, at this time I was more curious if anyone else had and what they had thought of it. Any first hand opinions/knowledge of Austin Homebrew Supply and their products would also be helpful.

I can't vouch for this recipe, but I will say that a quad might be a bit much for a second brew. Are there any lower alcohol styles that you enjoy?

I wasn't necessarily planning it as my second brew, I have a porter lined up for that, just trying to accomplish my due diligence in prepatory research for the future.

I never ordered from Austin Homebrew, but it is my understanding, based on a similar thread in the past, that they do not publicize the contents of their kits. If true, it's not very helpful for people who are trying to learn, IMO.

Not the same beer, but it is a big dark Belgian, and the recipe was created by two guys who know a thing or two about making beer. It has less extract and more sugar, so it probably comes across as less heavy than the Austin beer, and probably a lower ABV, too. Still, 9%.

Thanks for the link, not sure how I missed that kit in my travels on their site. I purchased all of my brewing stuff from northern brewer so I will just give that kit a try in the future instead.
