Labor Day weekend brewing, anyone?

    I just finished my first HM batch! :wink: Its a cinnamon chocolate pumpkin porter, its in the primary and in 5-7 days will put it in my carboy! I can not wait to try this beer!!! So long over priced craft beer :angry: that happens to be almost what I want! HEHEHE :grinning:

    All done, brewed the pale ale and weizenbock.

    I used 80% Canadian Pale Ale malt and 20% Best Malz Munich II for the Pale ale. The rich red color of the wort has me more excited about this pale ale than any brew in quite a while. Even the 2 gallons of starter wort I pulled off at the end had nice color. Not sure this will qualify as Pale but whatever.

    Only hops were Columbus/Nugget at 15 min for 60 IBU. I will keg hop one half with Columbus the other with Nugget.

    All in all two pretty smooth brewdays. Already have a starter of 1968 going for next week!

    Well, I've got this sort of Farmhouse Festbier thing I'm gonna brew today, I just can't seem to stop making changes to the recipe. So, we'll see...

    Brewed a Imperial Chocolate Stout last night. Will be adding coffee when I transfer to secondary. Really looking forward to this one.

    I hear ya. Im brewing now but was lazy enough I racked an ipa to secondary with some simcoe and amarillo and made room in a primary for this chocolate oatmeal porter. Drinking my Amarillo smash right now waiting on the last 20 minutes of this 90 min boil. It's the least amount of work to do so I could make some beer. Good thing I'm off tomorrow because these beers are going down nicely today while brewing.

    Wrapping up an Oatmeal Stout today. Looking forward to how it turns out. Having the extra time off to brew has been great.

    Brewed a 5 gallon batch of pumpkin spiced porter earlier today. Kitchen still mess like pumpkin spices, mmm!

    I started with the idea of a Daisy Cutter clone, but due to the lack of Amarillos, and an OG that ended up .005 above intended, I now have a borderline PA/IPA with 60 IBUs.

    Its going to be good regardless...

    Tuesday I'm getting my new MT and will try my first turbid mash lambic.

    Until then I'm putting about five cases of bottles in the oven to sterilize. Hopefully a hot bottle will burn my hand and another one will break and give me a deep enough cut that will convince me to get a kegerator.

    today my brother and i bottled a blueberry cream ale, then brewed a nut brown and while cleaning up found a dortmunder kit sitting in the pantry that we thought was just a box of extra supplies and what not, so we figured what the hell and brewed it up also. been a long day.

    We're hoping so. Didn't know how many pounds of blueberries it would take so we opted for artificial flavoring. Think we used about 5.5 ounces for 5 gallons, that seemed to suit our tastes fairly well. Also thinking of throwing some fresh roasted pecans and fruit in the secondary for the nut brown, wanna try and jazz it up a bit.

    Picked 9 oz (wet) of Cascades for tomorrow's brew; see picture below. Bittering with Columbus and finishing with these Cascades and an oz of Citra. Barring a natural disaster, this will be by far the best hop crop I've had in ~ 10 years of growing them. Cones are huge and no aphids this year! :slight_smile:

    Did 3 AG batches this weekend. Asian inspired Saison on Saturday with rice, ginger, Szechuan peppercorns and Sorachi Ace hops. Then on Sunday a Citra pale ale and a Trappist style quad. All of them are bubbling away right now, but that'll be my last 13 hour brew day!

    This recipe intrigues me- tried and tested?? Sounds awesome. I have nelson and amarillo hops- no cascade or summit. I have some nugget- would that work as well instead of summit at 60min? I have some centennial for the cascade as well?

    With it being harvest time for palisade peaches I would be an idiot not to use them. Brewing a peach pie imperial wheat. Total expeiment. 7 lbs of wheat lme, 1 lb wheat dme, with a half pound red wheat and crystal steeped prior. When I flame out I'm dumping in a 2lb peach slurry that's bee sitting over night with a quarter cup of dark brown sugar. At best I'll have somethiing wonderful, at worst I'll have a high abv wheat beer to sip on this fall.

    In the interest of full disclosure, I've brewed the grain bill with different hops and brewed the hops with a different grain bill. At the time I thought- these hops would taste great in a hopped up red. So this is what I came up with. I brewed it yesterday but substituted the new BRY-97 yeast for US-05. I can report back to you after I taste the finished product if you wish?

    Also. I see no reason those hops subs wouldn't go over well in this. I love nugget and centennial, so that's not saying much.

    Disclosure. I'm a Cyclone fan. But I like sharing brewing info with anyone. I hope that doesn't cloud our discourse?
